First, meat gets some salt and pepper and then it is smoked for 15 hours until it becomes very soft and tender. The owner explains that the idea to open BrisketTown developed out of curiosity and perfecting recipe and meat cooking process. The restaurant was open in 2012 and in April 2013 they opened a second location in Chelsea, which is called SmokeLine.
