They go by “Earth, Wheat, Fire”, and we love laconic slogans! Finally, Brooklyn, namely Bushwick, gets a new pasta haven. We really want that chicken confit and Alpine cheese bucatini.

Apparently there's a 6-Course pasta tasting menu available (we wonder what that's like at a pasta restaurant) at the Chef's table by reservation only for $85 per person, plus Tax and gratuity (oh yeah, there's that). We feel that grano arso stracci with morels, rosemary, and Parmesan-chili pangrattato; pork-cheek lasagna with fresh mozzarella and parsley noodles; and the green chickpea gnudi, filled with soft ricotta atop a tangy yogurt labneh sound convincingly enough for a new place.

They're serious about their grains which are locally sourced and hand-milled for the house bread, served with butter topped with buttermilk, and their cocktails. Out of the gigantic oven, which serves as a kitchen centerpiece, come fire-roasted beets and other baked stuff.
