Initially, they all met while working at Charlie Trotter’s in Chicago, and this time, around even tables are handmade by Ramos' uncle in Indiana. What's for dinner in the unfussy fine dining spot? Depends on when you decide to drop in, as the place turns into a bistro on Monday nights, serving simpler fare like a Grilled Ham & Swiss sandwich or a burger topped with Cabot cheddar and a vidalia onion marmalade.

On other nights it's: duck rillettes, risotto and scallop dishes, caramelized romanesco salad and Atlantic striped bass with saffron and manila clams, seared fleshy cuttlefish with a lick of peppery togarashi mayonnaise and green garlic ($14), and hanger steak with a dressing of Argentine chorizo and bok choy ($26).
